- 1 piece Red onion (sliced into strips)
- 100 g Button mushrooms (sliced into strips)
- 3 piece Garlic cloves (minced)
- 10 g Fresh ginger (grated)
- 1 tbsp Cornstarch (maize starch) (to thicken the sauce)
- 5 tbsp Soy sauce (tamari or light soy)
- 1 tbsp Rice vinegar
- 2 tbsp Sesame oil
- 125 g Chinese egg noodles (to cook)
- 100 g Frozen peas
- 10 cl Water (for the sauce)
- few leaves Fresh cilantro (for garnish)
- 1 tsp Toasted sesame seeds
- 1 tbsp Cooking oil (vegetable oil) (for stir‑frying)
Instructions
Prepare the vegetables
Slice the red onion into strips, cut the mushrooms into strips, mince the 3 garlic cloves and grate the fresh ginger.

Prepare the sauce
In a bowl, mix the cornstarch, 3 tablespoons soy sauce, rice vinegar, 1 tablespoon sesame oil and 10 cl water until smooth.

Cook the noodles
Bring water to a boil in a saucepan, add the noodles and cook according to package instructions (about 8 minutes). Drain and set aside.
