Chef Tips from the Video
- Lightly toast the shredded coconut dry before incorporating for a more pronounced aroma.
- Add a teaspoon of vanilla extract to the batter for an extra flavor note.
- Use couverture chocolate (70% cocoa or higher) for a shiny, crisp glaze.
Troubleshooting
The cake is too dense.
Check that the baking powder is still active and do not over‑mix the batter after adding the flour.
The glaze separates or becomes grainy.
Melt the chocolate over low heat or in the microwave in short bursts, stirring constantly. Add a little extra butter if needed.
The cake sticks to the pan.
Thoroughly grease the pan and, if possible, line it with parchment paper.
