Ingredients
- 200 g farfalle (or penne) (dry pasta, to cook al dente)
- 250 g chicken breast fillet (cut into cubes or strips)
- 80 g pitted Greek olives (whole or sliced)
- 150 g canned sweet corn (drained)
- 150 ml light sour cream (not thick, for a light sauce)
- 5 ml Dijon mustard (about 1 teaspoon)
- 5 ml garlic paste (or garlic powder) (about 1 teaspoon or 1 pressed garlic clove)
- 15 ml olive oil (1 tablespoon to sear the chicken)
- 1 pinch salt
- 1 pinch black pepper
- 1 pinch Provençal herbs
- 30 g grated parmesan (plus a little extra for serving)
Instructions
Cooking the pasta
Bring a large pot of salted water to a boil, add 200 g farfalle, cook 10‑12 minutes al dente. Drain, rinse under cold water and let cool completely.

Cooking the chicken
Cut the chicken fillet (250 g) into cubes. Heat 1 tbsp olive oil in a skillet over medium‑high heat, sear the chicken 3‑4 minutes, season with salt, pepper and Provençal herbs, cook until golden and cooked through.

Preparing the creamy sauce
Reduce the heat, add 150 ml light sour cream, 1 tsp mustard, 1 tsp garlic paste and a splash of water (≈30 ml) if needed. Mix for 2 minutes without bringing to a boil, stir in 30 g grated parmesan and adjust seasoning.

Assembling the salad
In a large bowl, combine the cooled pasta, sautéed chicken, creamy sauce, drained corn and pitted Greek olives. Toss gently to coat everything.
