- 1 can (15 oz) Corn (drained)
- 1 can (15 oz) Black Beans (drained and rinsed)
- 1 can (10 oz) Rotel Diced Tomatoes with Green Chilies (drained)
- 5 cups Chicken Broth
- 2 pieces (about 1 lb total) Chicken Breast (boneless, skinless)
- 1 teaspoon Black Pepper
- 1 teaspoon Salt
- 1 tablespoon Taco Seasoning
- 4 tablespoons Cream Cheese (cubed, about 2 oz)
- 1 cup Cheddar Cheese (shredded)
Instructions
Sauté Aromatics
Heat the olive oil and butter in the Dutch oven over medium heat. Add the diced yellow onion and cook, stirring occasionally, until softened, about 3–4 minutes.

Stir in the minced garlic and cook for just 15 seconds, until fragrant. Be careful not to let it burn.

Build the Soup Base
Add the tomato paste, drained corn, drained black beans, and drained Rotel. Pour in the chicken broth, then nestle the two raw chicken breasts into the liquid. Sprinkle with pepper, salt, and taco seasoning. Stir to combine.
