Ingredients
- 600 ml Whole Milk (organic whole milk, best for custard)
- 1 pod Vanilla Bean (split lengthwise and scrape seeds; can substitute with extract)
- 100 g White Granulated Sugar (for caramel)
- 60 g White Granulated Sugar (for custard mixture)
- 2 pcs Large Free-Range Eggs (room temperature)
- 4 pcs Egg Yolks (separated from whites; keep whites for later use)
- 2 pcs Passion Fruit Pulp (fresh pulp only, for garnish)
Instructions
Make Dark Caramel
Place 100 g white sugar and 2‑3 Tbsp water in a frying pan over medium heat. Let it melt, turn golden, then darken to a deep amber without stirring. Remove from heat once the caramel reaches a dark brown color.
Time: PT5M
Infuse Milk with Vanilla
In a saucepan, combine 600 ml whole milk with the scraped seeds (and pod) of 1 vanilla bean. Bring to a gentle simmer for 5‑8 minutes, then remove from heat and discard the pod.
Time: PT8M
Whisk Eggs and Sugar
In a mixing bowl, whisk together 2 whole eggs, 4 egg yolks, and 60 g white sugar until the mixture lightens to a pale golden color.
Time: PT3M
Temper Egg Mixture with Milk
Slowly pour the hot vanilla‑infused milk into the egg‑sugar mixture while whisking constantly. This gently raises the temperature without scrambling the eggs.
Time: PT2M
Coat Molds with Caramel
Drizzle a thin layer of the dark caramel into each heart‑shaped ramekin, swirling to coat the bottom evenly. Set aside.
Time: PT5M
Water‑Bath Bake
Place the ramekins on a baking tray, add about 1 inch of hot water to the tray, and bake in a pre‑heated oven at 150°C (300°F) for 30 minutes. The gentle heat creates a wobbly, silky custard.
Time: PT30M
Temperature: 150°C
Cool in Water Bath
Remove the tray from the oven and let the ramekins sit in the water bath for about 1 hour until they reach room temperature.
Time: PT1H
Refrigerate
Transfer the cooled ramekins to the refrigerator and chill for at least 4 hours (or overnight) before unmolding.
Time: PT4H
Serve with Passion Fruit
To serve, run a thin knife around each ramekin, invert onto a plate, and drizzle fresh passion fruit pulp over the top.
Time: PT2M
