The strawberries release too much water
Thoroughly dry the strawberries after washing and lightly dust them with sugar before folding in.
The top of the cake browns too quickly
Cover the cake with a sheet of aluminum foil midway through baking.
Storage
Refrigerator: Store the cake covered for 3 to 4 days in the refrigerator.

Room temperature: At room temperature, the cake keeps for 1 day, away from moisture.
Make-Ahead Tips
- Prepare the cake the day before, keep it in the refrigerator and let it come to room temperature before serving.
- The strawberry jam can be applied just before serving to prevent the glaze from softening the cake.
