Ingredients
- 1.5 kg Baby Potatoes (skin on, washed)
- 3 Tbsp Olive Oil (extra virgin, for drizzling)
- 1 tsp Salt (plus extra for seasoning)
- 1 tsp Black Pepper (freshly ground)
- 1 tsp Red Pepper Flakes (adjust to heat preference)
- 1 tsp Garlic Powder
- 0.5 tsp Dried Oregano
- 0.5 tsp Dried Basil
- 2 stalks Spring Onions (thinly sliced for garnish)
- 2 Tbsp Fresh Parsley (chopped, for garnish)
- 1 piece Red Chilies (thinly sliced, optional for heat)
Instructions
Boil Potatoes
Place baby potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Reduce to a simmer and cook 15‑20 minutes until potatoes are fork‑tender but still hold their shape.

Drain and Preheat Oven
Drain potatoes in a colander. While they drain, preheat the oven to 250°C (482°F) and line a baking tray with parchment paper.

Temperature: 250°C
Smash and Season
Arrange potatoes on the parchment‑lined tray, leaving space between each. Using a potato masher or the flat side of a glass bottle, gently press each potato until it flattens to about 1‑1.5 cm thickness. Drizzle generously with olive oil and sprinkle salt, black pepper, red pepper flakes, garlic powder, dried oregano, and dried basil over the smashed potatoes.

Place the tray in the preheated oven (top grill or middle rack) and bake for about 15 minutes, or until the tops turn golden and crispy.
