Critical Steps — Do Not Skip
- Cut fries to uniform size
- Properly coat with cornstarch for crispness
- Do not overload the sheet to avoid steam
Chef Tips from the Video
- Using perforated parchment paper allows air to circulate and makes the fries crispier.
- For a spicy version, add a pinch of cayenne pepper to the spice mix.
Troubleshooting
Fries are soggy instead of crispy.
Make sure to use enough cornstarch and not overload the sheet. Flip the fries halfway through and increase the cooking time slightly.
Fries burn quickly.
Lower the temperature to 190°C and watch more closely, especially during the final minutes.
Storage
Refrigerator: Store in an airtight container 2–3 days. Reheat in the oven at 180°C to restore crunch.
Freezer: Yes, freeze on a sheet in a single layer, then transfer to a freezer bag. Reheat directly in the oven 10 minutes at 200°C.
Room temperature: Do not leave out more than 2 hours at room temperature.
Make-Ahead Tips
- Cut and coat the fries, then keep them covered in the refrigerator for 30 minutes before baking.
- Pre‑prepare the Tex‑Mex spice blend and store it in a small jar.
