  • 30 g White sugar (Granulated sugar)
  • 0.5 tsp Ground cinnamon (A pinch (about 1/2 teaspoon))
  • 1 bean Vanilla bean (Scraped seeds, the pod can be reused to flavor the sugar)
  • 1 sheet Butter puff pastry (Puff pastry, about 275 g, thawed if frozen)
  • 10 g Butter (Small pats to place on the apples (optional))
  • 1 tbsp Maple syrup (To drizzle the tart just before serving (optional))

Instructions

  1. Cut the apples

    Wash, peel and cut the apples into large dice of about 2 cm. Set aside in a bowl.

  2. Prepare the sugar‑cinnamon‑vanilla mixture

    In a small bowl, mix 30 g of white sugar with 0.5 tsp of cinnamon. Add the seeds from the vanilla bean and stir. Place the empty pod in the sugar so it flavors further.

  3. Coat the apple pieces

    Pour the sugar‑cinnamon‑vanilla mixture over the apple dice. Mix by hand until each piece is well coated.

  4. Prepare the puff pastry

    Roll out the puff pastry in the tart pan. Prick the surface with a fork to prevent it from puffing too much in the centre.

  5. Arrange the apples on the pastry
