Critical Steps — Do Not Skip
- Add lemon juice immediately after cutting the avocado to preserve colour.
- Blend the avocado with olive oil before adding watery ingredients to keep the texture smooth.
- Store in an airtight container with plastic wrap touching the surface to avoid browning.
Chef Tips from the Video
- For an extra silky texture, run the avocado through a fine sieve before blending.
- Swap feta for soft goat cheese for a milder tang.
- Add a handful of fresh herbs (e.g., dill or cilantro) for a different flavour profile.
Troubleshooting
Spread turned brown after storage.
Make sure the lemon juice was added before blending and store the spread with plastic wrap touching the surface in an airtight container.
Spread is too watery.
Add a little more feta cheese or a splash of olive oil and blend again until the desired thickness is reached.
Flavor is too bland.
Taste and add a pinch more salt, pepper, or a bit more lemon juice. You can also increase the amount of feta.
Storage
Refrigerator: Up to 3 days in an airtight container; surface covered with plastic wrap.
Freezer: Not recommended – texture changes after thawing.
Room temperature: Only for a short serving period (max 2 hours).
Make-Ahead Tips
- Press plastic wrap onto the surface of the spread before sealing the container to keep it green.
- The spread can be made a day ahead; just give it a quick stir before serving.
