Ingredients

  • 150 g Shelled hazelnuts (Roast in the oven at 180°C for 10 min then remove the skin by rubbing them in a kitchen towel.)
  • 70 g White sugar (Can be replaced with powdered sugar for a smoother texture.)
  • 1 pinch Salt (Fine salt preferred.)
  • 80 g Water (Used to dilute the powdered milk.)
  • 20 g Neutral oil (e.g., canola or sunflower oil) (Very little oil to keep the spread creamy without excess fat.)
  • 10 g Unsweetened cocoa powder (Adjust according to desired chocolate intensity.)
  • 10 g Whole milk powder (Dilute in hot water. If unavailable, replace with 80 g liquid milk.)

Instructions

  1. Roast the hazelnuts

    Preheat the oven to 180°C. Spread the hazelnuts on a baking sheet lined with parchment paper and bake for 10 minutes until lightly golden.

  2. Remove the hazelnut skins

    Take the hazelnuts out of the oven, let them warm slightly then place them in a clean kitchen towel. Rub vigorously to remove most of the skin.

  3. Blend hazelnuts, sugar and salt

    In the blender bowl, add the hazelnuts, white sugar and the pinch of salt. Blend on high speed until a smooth, slightly fluid paste forms (about 1 minute).

  4. Prepare the milk‑water mixture

    In a small bowl, mix the milk powder with the 80 g of water until fully dissolved.

  5. Incorporate milk and cocoa

    Pour the milk‑water mixture into the blender containing the hazelnut paste, add the cocoa powder and blend another 30 seconds to 1 minute until the color is uniform.

  6. Add oil and emulsify

    Add the 20 g of neutral oil and blend for an additional 30 seconds to emulsify everything and obtain a creamy texture.

  7. Transfer to jar

    Pour the spread into a clean glass jar with a lid. Seal tightly.

  8. Chill in refrigerator

    Store the jar in the refrigerator for at least 2 hours before serving so the texture stabilizes.
