Ingredients
- 2 slices Bread (sturdy white or Italian bread, lightly toasted)
- 1 medium Tomato (ripe, sliced thin)
- 1 tablespoon Olive Oil (extra-virgin, for drizzling)
- 1 pinch Salt (preferably kosher or sea salt)
- 1 pinch Black Pepper (freshly ground)
- 1/2 cup Mozzarella Cheese (shredded or thinly sliced, preferably fresh)
- 4-5 leaves Fresh Basil Leaves (torn or whole, added after baking)
Instructions
Preheat the Oven
Set the Easy Bake Oven (or toaster oven) to 350°F (180°C) and let it preheat for about 2 minutes.

Prepare the Tomatoes
Wash the tomato, cut it into thin rounds, then place the slices in a bowl. Sprinkle with a pinch of salt, a pinch of black pepper, and drizzle the tablespoon of olive oil. Toss gently to coat.

Lay the two slices of bread on the prepared baking sheet. Evenly distribute the seasoned tomato slices over the bread, covering as much surface as possible. Sprinkle the shredded mozzarella over the tomatoes, then add the fresh basil leaves on top.
