Chef Tips from the Video

Troubleshooting
Potatoes remain soft and do not brown.
Make sure they are thoroughly dry before adding oil and do not overcrowd the sheet; leave space between each piece.
Garlic burns and becomes bitter.
Cook the garlic in its skin (jacket) and remove it from the oven as soon as it is tender, usually at the same time as the potatoes.
Storage
Refrigerator: Store in an airtight container for 2 to 3 days.
Freezer: Not recommended: potatoes may become mushy.
Room temperature: Consume within 2 hours of cooking.
Make-Ahead Tips
- Prepare the marinade and coat the potatoes ahead of time; keep refrigerated up to 2 hours before cooking.
- The potatoes can be partially steamed for 10 minutes then roasted for a time‑saving boost.
