Ingredients
- 200 g Raw peeled shrimp (Deveined, coarsely chopped)
- 30 feuilles Wonton wrappers (Packaged, at room temperature)
- 1000 ml Chicken broth (Homemade or diluted broth cube)
- 20 g Fresh ginger (Peeled, 2 cm piece)
- 2 gousses Garlic cloves (Finely chopped)
- 3 tiges Scallion (White and green parts separated, thin rounds)
- 1 c. à soupe Soy sauce (Low-salt preferably)
- 1 c. à café Sesame oil (Toasted, for flavor)
- 1 c. à café Cornstarch (or potato starch) (To bind the filling)
- 1 pincée Black pepper (Freshly ground, to taste)
- 100 g Chinese noodles (optional) (Cooked separately and added at serving)
Instructions
Slice the ginger
Cut the piece of ginger into four thick slices.

Infuse the ginger in the broth
Place the four slices in the pot containing the chicken broth. Bring to a simmer and let infuse for 10 minutes.

Prepare the aromatics
Cut two thin slices of ginger into a brunoise, thinly slice the white part of the scallions into rounds, chop the two garlic cloves.

Prepare the shrimp
Peel the shrimp, remove the digestive tract, then coarsely chop them.
Time: PT5M
Prepare the filling
In a mixing bowl, combine the chopped shrimp, the ginger brunoise, garlic, the white part of the scallion, 1 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp cornstarch and a pinch of pepper. Mix for 3 to 4 minutes until a homogeneous paste forms.

Assemble the wontons
Lightly moisten each wonton wrapper with a little water. Place 1 tsp filling in the center, fold into a triangle, moisten the edges and press firmly to seal the folds.

Cook the wontons
Bring a large pot of water to a boil. Drop the wontons and cook for 5 minutes until they float to the surface.

Remove the wontons with a slotted spoon and plunge them for 10 seconds into a bowl of ice water to firm up the dough.

Finish the soup
Drain the wontons and add them to the infused broth. Reheat for 2 minutes, then season with a drizzle of sesame oil, a little pepper and sprinkle with green scallion rounds.
