Troubleshooting

The chicken is too dry.

Do not cook it more than 5 minutes over medium heat and add a splash of water with the sauce if needed.

The dish lacks heat.

Add more chilies or a small spoon of sriracha sauce at the end.

The basil turns black and bitter.

Add it off the heat and cook it only for 30 seconds.

Storage

Refrigerator: Store the chicken and rice separately in airtight containers, consume within 2 days.

Freezer: Not recommended for fresh basil, but cooked chicken can be frozen for 1 month (without the rice).

Room temperature: Do not leave at room temperature for more than 2 hours.

Make-Ahead Tips

  • Prepare the sauce (water + soy sauces + sugar) the day before and keep refrigerated.
  • Basil can be chopped and stored for 1 day in the refrigerator in a loosely sealed plastic bag.
