- 4 medium Tomatoes (washed, cored, quartered and pressed for juice)
- 1 cup Tomato Puree (store‑bought or homemade)
- 2 large Shallots (finely diced)
- 3 cloves Garlic (minced)
- 8 leaves Fresh Sage Leaves (chopped; can use 1 tsp dried sage)
- 1 cup Arborio Rice (risotto rice, rinsed briefly)
- 4 cups Vegetable Stock (low‑sodium; keep warm)
- 2 tablespoons Olive Oil (extra‑virgin)
- to taste Salt (kosher or sea salt)

Instructions
Press Tomatoes for Juice
Wash the tomatoes, remove the cores, quarter them and press through a food press or squeeze by hand to extract the juice. Set the juice aside and keep the pulp for optional use later.
