- 1 cup Condensed Milk (sweetened, canned)
- 1 cup Full‑Fat Coconut Milk (shake can before opening)
- 1/2 cup Granulated Sugar (adjust for sweetness)
- 2 Tbsp Unsalted Butter (cut into small pieces)
- 1/4 tsp Salt (fine sea salt)
- 1 tsp Vanilla Extract (pure vanilla)
- 1 tsp Lemon Juice (freshly squeezed)
Instructions
Steam the Ube
Place the whole ube (with skins) in a steamer basket over boiling water. Cover and steam for about 20‑25 minutes, until a fork slides in easily and the interior is soft.
Time: PT25M
Temperature: 100°C
Peel and Chop
Remove the ube from the steamer, let cool just enough to handle, peel off the skins, and chop the flesh into roughly 1‑inch cubes.
Time: PT5M
Measure Liquids and Sugar
While the ube cools, measure evaporated milk, condensed milk, coconut milk, and granulated sugar into separate containers.
Time: PT5M
Blend to a Velvety Puree
Add the chopped ube, evaporated milk, condensed milk, coconut milk, and sugar to the stick blender. Puree until completely smooth and velvety, with no lumps.
Time: PT5M
Simmer the Jam
Transfer the puree to a medium saucepan. Bring to a gentle simmer over medium heat, then reduce to low and let it cook for 45 minutes, stirring every 2‑3 minutes with a wooden spoon. Keep the lid partially on to prevent splattering.
Time: PT45M
Temperature: Medium heat
Finish with Butter, Salt, Vanilla, and Lemon
When the jam has thickened (it should coat the back of a spoon), remove from heat and stir in butter, salt, vanilla extract, and lemon juice until fully incorporated.
Time: PT5M
Jar the Jam
While the jam is still hot, ladle it into a sterilized jar, seal tightly, and let cool to room temperature. Once cooled, refrigerate for up to 5 days or freeze for longer storage.
Time: PT10M
