Ingredients

  • 30 g Wild Garlic (finely chopped)
  • 150 g Cherry Tomatoes (halved)
  • 2 stalks Spring Onions (finely chopped)
  • 3 large Eggs (room temperature)
  • 2 tbsp Unsalted Butter (divided, melted for sauté and for eggs)
  • 1 pinch Sea Salt
  • 1 pinch Black Pepper
  • 1 tsp Mixed Herbs (dried (e.g., thyme, oregano))
  • 2 tbsp Cottage Cheese (crumbled)
  • 1 tbsp Pesto (store‑bought or homemade)
  • 1 tbsp Fresh Herbs (parsley or chives) (chopped for garnish)

Instructions

  1. Prep the vegetables

Finely chop the wild garlic, slice the spring onions, and halve the cherry tomatoes.

    Time: PT10M

  2. Sauté aromatics and tomatoes

Heat 1 tbsp butter in a non‑stick skillet over medium heat. Add the spring onions and sauté for 1 minute, then add the cherry tomatoes, sea salt, black pepper and mixed herbs. Cook for 2–3 minutes until softened.

    Time: PT5M

    Temperature: Medium (≈350°F)

  3. Add wild garlic

Add the finely chopped wild garlic to the pan and stir for about 30 seconds, just until it wilts and stays bright green. Transfer the entire filling to a bowl and set aside.

    Time: PT1M

    Temperature: Medium (≈350°F)

  4. Whisk the eggs

In a mixing bowl, crack the 3 eggs, add a pinch of sea salt and a pinch of black pepper, then whisk until fully combined and slightly frothy.

    Time: PT2M

  5. Cook the omelette base

Wipe the skillet clean, add the remaining 1 tbsp butter and melt over medium heat. Pour in the whisked eggs, letting them spread evenly. Cook for 2–3 minutes until the edges begin to set but the surface is still slightly runny.

    Time: PT4M

    Temperature: Medium (≈350°F)

  6. Add filling and finish

Scatter the wild‑garlic‑tomato filling over one half of the omelette, crumble the cottage cheese on top, sprinkle a little extra mixed herbs, and drizzle the pesto. Fold the omelette over the filling, press gently with the spatula, and cook another 1–2 minutes until the cheese melts and the omelette is set.

    Time: PT3M

    Temperature: Medium (≈350°F)

  7. Plate and garnish

Slide the omelette onto a plate, garnish with chopped fresh herbs and a few extra spring onion slices. Serve immediately.

    Time: PT1M
