Critical Steps — Do Not Skip
- Heat the milk‑butter‑sugar‑salt mixture until boiling
- Add the flour all at once and form a homogeneous ball
- Incorporate the eggs observing the rooster’s crest test
- Bake at 200 °C for 20 minutes
Chef Tips from the Video
- Use very fresh eggs at room temperature for better emulsification.
- Sifting the dough through a sieve before putting it in the piping bag prevents lumps.
- For an even crunchier finish, sprinkle the fleur de sel just before baking.
Troubleshooting
The dough does not form a ball after adding the flour.
Check that the milk‑butter mixture was boiling before adding the flour. If the dough remains liquid, add an extra 10 g of flour and stir vigorously.
The chouquettes remain flat after baking.
Ensure the dough was properly dried for 2‑3 minutes and the eggs were incorporated correctly. A not‑hot enough oven or opening the oven too often prevents rising.
The fleur de sel dissolves and makes the chouquettes too salty.
Sprinkle very lightly with a small spoon, and do not cover the entire surface.
Storage
Refrigerator: Store in an airtight container for up to 2 days.
Freezer: Pack individually and freeze for up to 1 month.
Room temperature: Consume the same day to retain crunch.
Make-Ahead Tips
- Choux pastry dough can be prepared ahead, covered and stored in the refrigerator for 24 hours.
- Pipe the chouquettes onto parchment, freeze raw, then bake directly when needed.
- Sprinkle the fleur de sel just before baking for a stronger flavor.
