Ingredients
- 6 cups Water (for boiling pasta)
- 2 tablespoons Salt (for pasta water; additional 1½ teaspoons used in sauces)
- 250 g Elbow Macaroni Pasta (cook al dente, then drain)
- 2 pcs Jumbo Hot Dogs (slice lengthwise into strips)
- 2 pcs Onion (finely chopped)
- 6 cloves Garlic (finely chopped)
- 1 pcs Red Bell Pepper (small amount, finely chopped)
- 500 g Ground Pork (lean or regular)
- 3 tablespoons Tomato Paste
- 500 g Tomato Sauce
- 0.25 cup Light Brown Sugar
- 80 g Grated Cheese (any sharp cheese, used in red sauce)
- 50 g Butter (unsalted, for cheese sauce)
- 250 ml All‑Purpose Cream
- 185 ml Evaporated Milk (half of a 370 ml can)
- 200 g Mozzarella Cheese (grated, for cheese sauce and topping)
- 1.5 teaspoons Ground Black Pepper
Instructions
Cook the Pasta
Bring 6 cups of water to a boil in a large pot, add 2 Tbsp salt, then add 250 g elbow macaroni. Stir and reduce heat to low, cooking until al dente (about 8‑10 minutes).

Slice and Fry Hot Dogs
Slice the 2 jumbo hot dogs lengthwise into strips. Heat a frying pan over medium flame, add a drizzle of oil, and pan‑fry the strips until lightly toasted, about 4‑5 minutes. Transfer to a plate.

Sauté Aromatics
In the same pan, add a little oil if needed and sauté the finely chopped onions on high flame for ~20 seconds, then add the 6 chopped garlic cloves and sauté another 10 seconds. Finally add a small amount of finely chopped red bell pepper and sauté 10 seconds more.

Brown the Ground Pork
Add the 500 g ground pork to the pan. Cook, breaking it up, until the fat renders and the meat is browned, about 5‑6 minutes.

Build the Red Sauce
Stir in 3 Tbsp tomato paste, then add 500 g tomato sauce, 1 cup water, 1 tsp salt, ground black pepper, 80 g grated cheese, ¼ cup light brown sugar, and the fried hot‑dog strips. Reduce heat to low and simmer, stirring occasionally, until the sauce thickens slightly and the sugar and cheese melt, about 8‑10 minutes.

When the macaroni is al dente, pour it into a colander, drain, and let it cool for a minute.

Return the drained macaroni to the pot or a large mixing bowl, pour the prepared red sauce over it, and toss until evenly coated.

In a clean pan, melt 50 g butter over low flame. Add 250 ml all‑purpose cream and stir for ~30 seconds. Pour in half of the 370 ml evaporated milk (≈185 ml) and cook another 1 minute. Season with ½ tsp salt and ground black pepper, then stir in 80 g grated cheese followed by 200 g grated mozzarella. Continue cooking on medium flame, stirring, until the sauce thickens and the cheese is fully melted, about 4‑5 minutes.

Spread the macaroni‑in‑red‑sauce mixture evenly in a greased baking dish. Pour the cheese sauce over the top, smoothing with a spatula. Sprinkle the remaining grated mozzarella evenly.
