Instructions
Prepare carrot
Peel the carrot, cut it into small uniform cubes, place in a pot of boiling water and cook for 10 minutes until just tender, then drain in a colander.

Mince onions and chop coriander
Finely mince the two small onions and chop the fresh coriander leaves.

Heat a frying pan over high heat, add 3 Tbsp vegetable oil, then add the minced onions. Fry, stirring occasionally, for about 2 minutes until they turn translucent.
