Ingredients

- 100 g Fresh Butter (made from the cream above; keep chilled until assembling)
- 2 tsp Flaky Sea Salt (good quality flaky sea salt for finishing)
- 1 tsp Sumac (Middle Eastern spice with lemony tang)
- 1 tbsp Lemon Thyme (leaves stripped from stems; adds citrus herb flavor)
- 1 tbsp Walnuts (finely chopped)
- 4 Fresh Figs (thinly sliced; choose ripe but firm figs)
- 1 tbsp Honey (drizzled over the board just before serving)
- 1 handful Edible Flowers (for garnish; ensure they are pesticide‑free)
Instructions
Whip the Cream
Pour the 600 ml of heavy whipping cream into a mixing bowl and whisk on the highest speed until it thickens and begins to separate.

Form Butter and Separate Buttermilk
Continue whisking until solid butter masses form and the liquid buttermilk pools at the bottom. Stop when the butter looks glossy and the buttermilk is clearly separated.

Drain and Wash Butter
Scoop the butter into a bowl of cold water. Gently squeeze the butter under the water to expel as much buttermilk as possible, then continue rinsing until the water runs clear.
