Ingredients
- 300 g Chicken fillet (cut into ~2 cm dice)
- 1 cuillère à soupe Olive oil (for cooking)
- 1 cuillère à café Paprika (to taste)
- 1 cuillère à café Ground cumin (to taste)
- 1 cuillère à café Turmeric (to taste)
- 2 cuillères à soupe Salty soy sauce (for deglazing)
- 1 moyen Onion (finely chopped)
- 2 cuillères à soupe Fresh parsley (chopped)
- 2 cuillères à soupe Fresh cilantro (chopped)
- 100 ml Heavy cream (to incorporate into the filling)
- 1 rouleau (≈250 g) Puff pastry (thawed, to be cut into circles)
- 1 Egg (beaten with 1 tbsp water for glazing)
- 50 g Grated cheese (emmental) (to grate on top)
Instructions
Cut the chicken and prepare the aromatics
Cut the chicken fillet into 2 cm dice, finely chop the onion, and mince the parsley and cilantro. Set aside.

Sauté the chicken
In a sauté pan, heat 1 tbsp olive oil over medium heat. Add the chicken and brown it until it develops a nice golden color.

Season and deglaze
Sprinkle the chicken with paprika, cumin and turmeric, stir quickly, then add the soy sauce. Let the sauce reduce slightly.

Add the aromatics and cream
Add the chopped onion, parsley, cilantro and heavy cream. Stir and cook for 2‑3 minutes until the cream thickens slightly.

Let the filling cool
Remove the pan from heat and let the filling cool for a few minutes so it does not soften the pastry.

Cut the puff pastry
On a lightly floured surface, roll out the puff pastry and cut circles about 10 cm in diameter using a cutter or a glass.
