Ingredients
- 100 g Chorizo (cut into slices about 0.5 cm thick)
- 5 ml Olive oil (a drizzle to help grill the chorizo)
- 1/2 Red bell pepper (cut into strips)
- 1 Spring onion (use the white part and keep the green part for garnish)
- 400 g Cooked chickpeas (drained and rinsed)
- 200 ml Organic apple juice (reduce until syrupy consistency)
- 2 c. à soupe Flat-leaf parsley (chopped, for topping)
- to taste Black pepper (freshly ground)
Instructions
Brown the chorizo
Heat the pan over medium heat, add a drizzle of olive oil then lay the chorizo slices. Grill for 3‑4 minutes, stirring to release the fat.

Add the red bell pepper
Add the red bell pepper strips to the pan. Stir so the pepper coats with the chorizo fat.

Sauté the onion
Add the white part of the spring onion, sliced into rounds. Reserve a few green stalks for garnish. Sweat for 5 minutes until the liquid has evaporated.
