- 0.5 pound Pork Chorizo (casing removed)
- 1.5 pounds Shell Pasta (half‑cooked (boil 4‑5 min then drain))
- 2 cups Sharp Cheddar Cheese (shredded)
- 8 ounces Cream Cheese (softened)
- 2 cups Whole Milk (room temperature)
- 1 handful Cilantro (roughly chopped)
- 1 teaspoon Salt (or to taste)
- ½ teaspoon Black Pepper (freshly ground)
- ½ teaspoon Garlic Powder
Instructions
Roast the vegetables
Preheat the oven to 425°F. Spread the sliced bell peppers and onion on a baking sheet, drizzle with a little oil, and roast for 20 minutes, stirring halfway through, until slightly charred.

Brown the meat
