  • 180 g Mild chorizo (skin removed, cut into small dice)
  • 100 g Fresh cheese (type fromage blanc) (at room temperature)
  • 1 cuillère à soupe Tomato paste
  • 5 cuillères à soupe Tomato coulis
  • 5 feuilles Fresh basil (roughly chopped)
  • 1 pincée Salt
  • 1 pincée Pepper

Instructions

  1. Prepare the chorizo

    Score the skin of the chorizo lengthwise, remove the skin, cut the chorizo into thin rounds then into small dice.

  2. Chop the basil

    Roughly chop the basil leaves with a knife.

  3. Combine the ingredients

    Place the cut chorizo, chopped basil and tomato coulis in the bowl.

  4. Blend into a puree

    Using an immersion blender, blend gently until you obtain a slightly stringy rillettes consistency.

  5. Add tomato paste and cheese

    Incorporate the tomato paste then the fresh cheese, blend again until you get a well‑combined mixture.

  6. Season

    Salt and pepper to taste, mix lightly.
