- 4 cups Vegetable Broth (low‑sodium)
- 0.5 cup Raw Cashews (soaked 30 min, drained, then blended with water to make cream)
- 0.5 cup Water (for blending cashews)
- 1 each Lemon (zested and juiced)
- 0.5 teaspoon Crushed Red Chili Flakes (adjust to heat preference)
- 0.5 teaspoon Salt (or to taste)
- 0.25 teaspoon Black Pepper (freshly ground)
Instructions
Prepare Vegetables
Trim the asparagus and cut into 2‑inch pieces. Thinly slice the fennel, reserving the fronds for garnish. Dice the onion and mince the garlic.

Heat olive oil in the large pot over medium heat. Add the onion and fennel, cooking 4–5 minutes until softened. Stir in the garlic and cook another 30 seconds, being careful not to burn it.
