Ingredients
- 12 cloves Garlic Cloves (peeled, trimmed; discard any with mold)
- 0.25 medium onion Medium Onion (thinly sliced, optional to speed fermentation)
- 2 sprigs Fresh Rosemary (optional, washed)
- 2 sprigs Fresh Dill (optional, washed)
- 15 g Fine Sea Salt (no anti‑caking agents; pure salt only)
- 250 ml Water (filtered or boiled then cooled to room temperature)
- 1 piece Glass Fermenting Weight (keeps garlic fully submerged; can be a clean stone or zip‑top bag filled with water)
Instructions
Make the Brine
Combine 15 g fine sea salt with 250 ml filtered water in a mixing bowl and stir until fully dissolved.

Clean the Jar
Wash the glass jar, lid, and fermenting weight in hot, soapy water; rinse well and set aside.

Prepare Garlic
Peel the garlic cloves, trim any imperfect ends, and discard any cloves showing any mold.

Slice Onion (Optional)
Thinly slice a quarter of a medium onion; set aside.
