Ingredients
- 1 ounce Fresh Ginger (peeled (optional) and minced)
- 2 pieces Large Eggs (room temperature)
- 2 cups Cooked Rice (preferably day‑old, cold)
- 2 tablespoons Vegetable Oil (for stir‑frying)
- 1/2 teaspoon Salt (adjust to taste)
- 1/4 teaspoon White Pepper Powder (or crushed black pepper)
Instructions
Mince the ginger
Trim a piece of ginger about 1 inch thick and 3 inches long. Peel if desired, slice lengthwise into thin sheets, stack and cut into thin strips, then chop across the strips to create fine minced ginger.
Time: PT5M
Heat oil
Add 1 Tbsp vegetable oil to the pan and heat over medium‑high until the oil shimmers.
Time: PT1M
Scramble the eggs
Crack the two eggs directly into the hot pan. Stir continuously until the eggs are fully cooked but still soft, forming scrambled eggs. No seasoning is needed at this stage.
Time: PT3M
Sauté the ginger
Push the scrambled eggs to one side of the pan, add the remaining 1 Tbsp oil, then add the minced ginger. Sauté for about 1 minute, stirring occasionally to avoid burning.
Time: PT1M
Add the rice
Add the 2 cups cold cooked rice to the pan. Break up any clumps and stir‑fry, mixing evenly with the egg and ginger, until the rice is heated through and slightly crispy, about 4 minutes.
Time: PT4M
Season and finish
Sprinkle 1/2 tsp salt and 1/4 tsp white pepper (or black pepper) over the rice. Stir‑fry for another minute to distribute seasoning, then remove from heat and serve.
Time: PT1M
