Chef Tips from the Video
- Lightly toast the pistachios and almonds (5 min at 150°C) before incorporating to intensify flavor
- Use high‑quality parchment paper for easier release
- Let the bars cool completely before cutting to prevent crumbling
Troubleshooting
Bars are too crumbly
Add an extra 10‑15 g of syrup (honey or maple) or slightly reduce the amount of oats
Bars remain soft after baking
Extend baking by 5‑7 minutes or increase temperature to 190°C for a firmer crust
Mixture does not hold together well
Press more firmly in the pan and ensure the syrup is evenly distributed
Top burns before the interior is cooked
Cover the pan with a sheet of aluminum foil halfway through baking
