Chef Tips from the Video
- Choose couverture chocolate (cocoa ≥ 55 %) for optimal shine.
- Lightly sprinkle fleur de sel on top before the final cooling to enhance flavor.
- For a visual effect, alternate the colors by filling each half of the mold with the opposite chocolate.
Troubleshooting
The chocolate does not set and remains soft.
Return to the freezer for an additional 5‑10 minutes or refrigerate longer. Ensure the chocolate was fully melted and not overheated.
The filling is too liquid and runs.
Add more crumbled biscuits or let the mixture rest 2 minutes to thicken, then incorporate a bit more melted chocolate.
The chocolates stick to the mold.
Use high‑quality silicone molds, ensure the chocolate has fully cooled before unmolding.
