- 4 Sourdough Pita Dough (store‑bought or homemade, divided into 4 rounds)
- 2 tbsp Unsalted Butter (melted, for brushing pita)
- 1 cup Dried Garbanzo Beans (soaked overnight, then cooked)
- 2 cloves Garlic (for hummus) (peeled)
- 4 leaves Fresh Sage (finely minced)
- 2 tbsp Lemon Juice (freshly squeezed)
- 2 tbsp Tahini
- 2 tbsp Olive Oil (for hummus)
- 0.5 cup Feta Cheese (crumbled)
- 1 medium Cucumber (thinly sliced)
- 1 large Tomato (thinly sliced)
- 0.5 Red Onion (thinly sliced)
- 8 Lettuce Leaves (shredded)
- 1 tbsp Olive Oil (for sautéing meat)
Instructions
Soak Garbanzo Beans
Place the dried garbanzo beans in a large bowl, cover with plenty of cold water and let soak overnight (at least 8 hours).

Cook Garbanzo Beans
Drain the soaked beans, place them in a pot with fresh water, add 2 minced garlic cloves, 4 minced sage leaves, and a pinch of salt. Bring to a boil, then simmer until tender, about 30 minutes. Drain and set aside to cool.

Blend Hummus
