Ingredients
- 3 large Zucchini (sliced lengthwise into 1/4‑inch strips)
- 1 lb Ground Beef (or ground turkey for a leaner option)
- 1 small Onion (diced)
- 2 cloves Garlic (minced)
- 1 cup Marinara Sauce (low‑carb or homemade (no added sugar))
- 1 cup Ricotta Cheese (full‑fat)
- 1 cup Mozzarella Cheese (shredded, full‑fat)
- 0.25 cup Parmesan Cheese (grated)
- 1 tbsp Olive Oil (extra‑virgin recommended)
- 1 tsp Dried Basil
- 1 tsp Dried Oregano

Instructions
Preheat Oven
Set the oven to 375°F (190°C) and let it fully preheat while you prepare the ingredients.

Slice Zucchini
Trim the ends of the zucchinis and slice each lengthwise into thin strips about 1/4 inch thick. Lay the strips on a paper towel and lightly salt them to draw out excess moisture.

Sauté Aromatics
Heat 1 tbsp olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 3 minutes, then add the minced garlic and cook another 1‑2 minutes until fragrant.

Cook Ground Meat
Add the ground beef (or turkey) to the skillet. Break it up with a spatula and cook until browned and no longer pink, about 6‑8 minutes. Season with salt, pepper, dried basil, and dried oregano. Stir in the marinara sauce, reduce heat to low, and let simmer for 5 minutes.
