Chef Tips from the Video
- For an ultra‑smooth texture, pass the mango purée through a sieve before incorporating.
- A splash of rum or fruit liqueur (optional) adds aromatic depth without affecting freezing.
Troubleshooting
The ice cream is grainy after the first freeze.
Scrape the crystals vigorously with a fork and repeat the process every 2 hours.
The cream does not whip into whipped cream.
Make sure the cream is very cold and that the bowl and whisk are chilled. Use a cream with at least 30% fat.
The taste is too sweet.
Reduce the amount of sweetened condensed milk or add a bit more lemon juice to balance.
Storage
Refrigerator: Store the ice cream in the freezer; if you take it out, keep it in the refrigerator for a maximum of 1‑2 days.
Freezer: Up to 2 weeks in an airtight container.
Room temperature: Do not leave at room temperature for more than 30 minutes, otherwise the texture deteriorates.
Make-Ahead Tips
- Prepare the sweet mixture and the whipped cream separately, then assemble just before freezing.
- The ice cream stores very well in the freezer; you can make it 2 days ahead.
