  • 1 tsp Baking powder
  • 250 g All-purpose flour

Chef Tips from the Video

  • Use butter at room temperature for optimal creaming.
  • Sift the cocoa and flour to avoid lumps.
  • Pre‑heat the oven for at least 10 minutes before baking.
  • For an even more colorful effect, add a few drops of natural food coloring to the vanilla batter.

Troubleshooting

The batter is too dry and does not mix.

Add an extra 10‑20 ml of warm milk, one spoonful at a time, until a supple consistency is achieved.

The cocoa batter is too crumbly.

Incorporate a little more softened butter (5 g) or a drizzle of warm milk.

The layers blend during baking.

Observe the first 5‑minute bake to firmly set the first layer before adding the second.

The cakes remain soft after baking.

Extend the baking by an additional 2‑3 minutes or slightly increase the temperature to 190 °C.

Storage

Refrigerator: Store in an airtight container 3 to 4 days.

Freezer: Wrap individually and freeze up to 2 months.

Room temperature: At room temperature, they stay moist for 1 day.

Make-Ahead Tips

  • Prepare both batters, keep them separate in the refrigerator for 24 h before using.
  • Filled molds can be frozen raw and baked directly in the oven, adding 5 minutes to the baking time.
