Chef Tips from the Video
- Use slightly dry rice for a better crust hold.
- Sprinkle a bit of parmesan with the mozzarella for more depth of flavor.
- Serve the tart with a lemony green salad to balance the dish.
Troubleshooting
The rice crust crumbles when unmolding
Compress the mixture more, add a second egg or 1‑2 tablespoons extra cheese.
The cheese does not brown
Extend the second bake by 3‑5 minutes or switch the oven to grill mode at the end.
The filling is too dry
Add a drizzle of olive oil or 2 tablespoons vegetable broth while cooking the meat.
Storage
Refrigerator: Store in an airtight container 3 to 4 days.
Freezer: The rice crust can be frozen separately for 1 month; the assembled tart freezes for 2 months (without the browned cheese).
Room temperature: Do not leave at room temperature for more than 2 hours.
Make-Ahead Tips
- Pre‑bake the rice crust and keep it in the refrigerator before adding the filling.
- Prepare the filling ahead of time, reheat it slightly before assembling.
