Ingredients
- 500 g Ground Lamb (80% lean, preferably freshly ground)
- 2 Tbsp Fresh Mint Leaves (Finely chopped)
- 1 medium Red Onion (Diced)
- 100 g Jarred Roasted Red Peppers (Diced; can use fresh roasted peppers)
- 2 Tbsp Olive Oil (Extra‑virgin)
- 1 Tbsp Balsamic Vinegar (Can substitute red wine vinegar)
- 1 tsp Honey (Adds jammy sweetness)
- 0.25 tsp Chili Flakes (Adjust to taste)
- 0.5 tsp Salt
- 0.25 tsp Black Pepper (Freshly ground)
- 100 g Feta Cheese (Crumbled)
- 4 pieces Burger Buns (Soft brioche or sesame buns)
- 2 Tbsp Mayonnaise (Optional; can use Greek yogurt instead)
- 2 Tbsp Greek Yogurt (Plain, for a lighter spread)
- 4 pieces Lettuce Leaves (Romaine or butter lettuce)
- 1 large Beefsteak Tomato (Sliced)
- 400 g Frozen French Fries (Optional side, baked or fried)
Instructions
Prepare the Lamb Mixture
In a mixing bowl, combine the ground lamb, chopped fresh mint, a pinch of salt and black pepper. Mix gently with your hands until just combined; avoid over‑mixing.

Shape Patties
Divide the mixture into 4 equal portions and shape each into a round patty about 1 cm thick. Press a slight indentation in the centre of each patty to prevent puffing while cooking.

Dice Vegetables
While the patties rest, dice the red onion, and roughly chop the jarred roasted red peppers.

Sauté Aromatics
Heat the skillet over medium‑high heat and add 1 Tbsp olive oil. Add the diced red onion and sauté for 2‑3 minutes until translucent, then add the red peppers and continue cooking for another 2 minutes.

Create Balsamic‑Honey Glaze
To the onion‑pepper mixture, stir in the balsamic vinegar, honey, chili flakes, and a pinch of salt. Cook for 1‑2 minutes, stirring, until the mixture thickens to a jam‑like consistency.

Cook Lamb Patties – First Side
Push the glaze to one side of the pan, add the remaining 1 Tbsp olive oil, and place the lamb patties in the hot skillet. Cook for about 3‑4 minutes without moving them, until a deep brown crust forms.

Flip and Finish
Flip the patties, add the jammy glaze back over the top, and cook another 3‑4 minutes, or until the internal temperature reaches 160°F (71°C). Sprinkle crumbled feta on each patty, cover the skillet with a lid, and let the feta melt for 1 minute.

Toast Buns (Optional)
While the patties finish, split the burger buns and lightly toast them cut‑side down in the same skillet for 30 seconds, or until golden.
