The browned butter burned, bitter taste.

Remove from heat immediately as soon as the colour turns dark brown and strain. Redo the butter while watching closely.

The financiers are flat and do not rise.

Check that the browned butter was fully cooled before incorporation and that the egg whites were at room temperature. Do not over‑beat the batter.

The raspberries released too much juice, sogging the financiers.

Use firm fresh raspberries or lightly dust them with sugar before placing, or coat them with a light almond‑powder glaze.
