Chef Tips from the Video
- Use smoked Montbéliard sausage for authentic flavor.
- Choose a 15‑month‑aged cheese for a rich taste.
- Let the gratin rest before cutting to prevent it from falling apart.
Troubleshooting
Potatoes remain firm.
Extend baking by 10 to 15 minutes or increase temperature to 190°C.
Gratin is too soft.
Add a bit more breadcrumbs and extend baking until the top is well browned.
Cheese does not melt.
Cover the dish with aluminum foil for the first 30 minutes, then remove to finish baking.
