- 30 g Carrot Peels (saved from peeling; used as a base in the pan)
Instructions
Wash, Peel and Reserve Peels
Rinse the carrots under cold water, peel them, and set the peels aside in a small bowl.

Weigh the peeled carrots (≈500 g). Add 5 g sea salt (1 %) and 10 g granulated sugar (2 %) directly onto the carrots and toss until evenly coated.

Cover the bowl and let the carrots sit at room temperature for 30 minutes. The salt‑sugar mixture will draw out moisture, softening the carrots.
