Instructions

  1. Prepare the détrempe

    In the mixer bowl, add the flour and the 150 g of very cold butter cut into cubes. Mix for a few seconds with the paddle attachment. Add the white vinegar, the cold water and the salt, then incorporate gradually without stopping mixing. Do not over‑work the dough. Wrap the détrempe in contact film and place in the refrigerator for 30 min.

  2. Prepare the butter block

    Form a handle with a sheet of parchment paper. Place the 150 g of butter for the turnings in the centre, fold the handle and tap the butter with a rolling pin until softened. Fold the ends and roll the butter into a rectangle that will fill the entire paper envelope. Refrigerate 30 min.

  3. First single turn

    Flour the work surface and roll out the very cold détrempe along its full length. Place the butter rectangle on the lower part of the détrempe. Fold the upper part over the butter, then the lower part over the centre. Turn the dough a quarter turn to the right and roll it out again lengthwise.

  4. Second double turn

    Fold the lower edge of the dough strip onto the centre, then the upper edge onto the centre as well. Fold the whole thing in half. Turn the dough a quarter turn to the right and roll it out again along its full length.

  5. Third double turn

    Repeat the same double fold as the previous step: fold both edges toward the centre, fold in half, turn a quarter turn and roll out along the full length.

  6. Final rest

    Wrap the dough in contact film, place it in the refrigerator for 30 min before use. It is then ready to be cut and baked for your king cakes or other preparations.
