- sieve (fine mesh)
- whisk or wooden spoon
- heavy‑bottomed pot with lid
- individual molds (ramekins or silicone molds)
- silicone spatula (optional)
Critical Steps — Do Not Skip
- Sift the semolina to avoid lumps
- Achieve the right batter consistency (neither too liquid nor too thick)
- Grease the molds to prevent sticking
- Steam cooking without opening the lid
Chef Tips from the Video
- For a sweet version, add 1 tbsp sugar to the batter and serve with honey or maple syrup.
- Lightly sprinkle sesame seeds before cooking for extra crunch.
- Using silicone molds makes unmolding easier.
Troubleshooting
The batter is too thick and does not spread well in the molds.
Add 1‑2 tbsp cold water, stir gently until a fluid consistency is reached.
The cakes stick to the molds after cooking.
Ensure the molds were well greased and let them cool slightly before unmolding.
Cooking is uneven, some cakes are still doughy.
Make sure the pot is well covered and the steam is constant throughout the cooking time.
Storage
Refrigerator: Store in an airtight container 2‑3 days.
Freezer: Pack individually and freeze up to 1 month.
Room temperature: At room temperature, consume within 4 hours.
Make-Ahead Tips
- Prepare the batter ahead of time and keep it in the refrigerator for 30 minutes before cooking.
- The cakes reheat quickly by steaming or in the microwave.
