- 500 ml Whole milk (Bring to a boil then let simmer)
- 100 ml Whole liquid cream (Added to the salted butter caramel)
- 1 Vanilla bean (Split, scrape the seeds and add to the milk)
- 60 g Unsalted butter (30 g for the apples, 30 g for the caramel)
- 50 g Brown sugar (demerara) (Caramelizes the apples)
- 80 g White sugar (Base of the salted butter caramel)
- 2 Pink Lady apples (Peeled and diced into 1 cm cubes)
- 1 pinch Sea salt (For the salted butter caramel)
Instructions
Par‑cook the rice
Bring a large pot of water to a boil, add the short‑grain rice and cook for 3 to 4 minutes. Drain and set aside.

Prepare the vanilla‑infused milk
In the same pot, pour the milk, split the vanilla bean, scrape the seeds and add them to the milk. Bring gently to a simmer.

Cook the rice pudding
Stir the par‑cooked rice into the flavored milk, reduce heat to low and let simmer for 30 to 35 minutes, stirring occasionally until a creamy texture is achieved.

Prepare the apples
Peel the apples, cut into about 1 cm dice. Set aside.

Caramelize the apples
In a skillet, melt 30 g butter, add the apple dice and the brown sugar. Cook over medium heat, stirring until the apples are golden and lightly caramelized (about 8 minutes).
