Critical Steps — Do Not Skip
- Chill the roll in the freezer before slicing to prevent crumbling.
- Seal the roll edges properly so the filling does not escape during baking.
- Apply the thermal shock (refrigeration) to the tarts before baking to achieve a well‑risen pastry.
Chef Tips from the Video
- For extra indulgence, add a thin layer of cream cheese (type Boursin) between the salmon and the grated cheese.
- Lightly sprinkle sweet paprika on the rolls before baking for a reddish color and subtle flavor.
- Using slightly tart apples (Granny Smith) gives a pleasant contrast with the butter and sugar.
Troubleshooting
The pastry does not rise, stays soft.
Make sure the oven is fully preheated to 200 °C and the dough is not too warm before entering the oven. The thermal shock (refrigeration) before baking also helps.
The rolls fall apart during cutting.
Observe the freezing time (10 minutes) to firm the dough. Use a well‑sharpened serrated knife.
The apples become too soft.
Slice the apples very thinly and arrange them in a single layer. Add the vanilla sugar just before baking to avoid excess moisture.
Storage
Refrigerator: Store the rolls and tarts in an airtight container for 2 to 3 days.
Freezer: The rolls freeze well for up to 1 month; reheat 5 minutes at 180 °C before serving.
Room temperature: Consume within 2 hours if left at room temperature.
Make-Ahead Tips
- The rolls can be prepared the day before, kept in the refrigerator and baked on the day of serving.
- The tarts can be assembled and refrigerated up to 24 hours before baking.
- Both recipes freeze separately; reheat in the oven to regain crispness.
