Ingredients
- 50 ml Lemon Juice (freshly squeezed or bottled)
- 0.5 tsp Baking Soda (regular baking soda)
- 80 ml Milk (whole milk for richness; water works too)
- 200 g Cheddar Cheese (sharp cheddar, shredded)
- 10 g Unsalted Butter (cut into small pieces)
- 0.25 tsp Salt (or to taste)
Instructions
Create Sodium Citrate Solution
In the saucepan combine 50 ml lemon juice with 0.5 tsp baking soda. Stir gently; the mixture will fizz and bubble as the acid reacts with the base.

Add Liquid Base
Once the bubbling subsides, pour in 80 ml milk (or water) and whisk to combine with the sodium citrate solution.

Melt the Cheese
Place the saucepan over medium heat. Add the shredded cheddar and stir constantly until the cheese is completely melted and the sauce is smooth.
