Troubleshooting
Cupcakes are too dense or do not rise.
Ensure the butter was at room temperature and not melted, sift the flour, and do not overmix the batter after adding the liquid.
The buttercream is grainy.
Make sure the butter is very soft, sift the powdered sugar, and whisk long enough to achieve a smooth texture.
The frosting runs on the cupcakes.
Allow the cupcakes to cool completely before frosting and refrigerate the buttercream if it is too runny.
Storage
Refrigerator: Store the cupcakes in an airtight container in the refrigerator for up to 3 days.
Freezer: Wrap each cupcake individually in plastic wrap then place in a freezer bag. Keep for up to 2 months.
Room temperature: At room temperature, the cupcakes stay fresh for 1 day (consume quickly).
Make-Ahead Tips
- Prepare the batter ahead of time and keep it in the refrigerator for 2 h before baking.
