- 2 tablespoons Fresh Coriander (chopped)
- 3 medium Onion (cut into thick slices for caramelized onions)
- 1 tablespoon Water (sprinkled to help caramelization)
- 150 grams Paneer (for the sauce, cubed)
- 100 grams Thick Curd (Greek‑style yogurt, plain)
- 3 cloves Garlic (peeled)
- 1 teaspoon Mustard Sauce
- 1 teaspoon Red Chili Sauce
- 1 teaspoon Ketchup
- 1 teaspoon Butter (thinly spread for toasting buns)
- 4 pieces Millet Burger Buns (made with barley and rajgira; store‑bought)
- 1 head Lettuce (shredded; washed in ice‑cold water)
- 2 medium Tomato (cold, sliced thin)
Instructions
Sauté Vegetables
Heat 1 tsp oil in a cast‑iron skillet over high flame. Add the chopped onion, carrot, french beans, and capsicum. Sprinkle a pinch of salt and stir‑fry for about 5 minutes until the vegetables release their moisture and become slightly softened.

Cool Sautéed Veggies
Transfer the cooked vegetables to a mixing bowl and let them cool completely (about 5 minutes).

Prepare Potato‑Paneer Base
Grate 3 boiled potatoes and 150 g paneer into the bowl with the cooled vegetables. Add salt, chopped green chillies, ginger, turmeric, red chilli powder, garam masala, black pepper, oregano, chilli flakes, chaat masala, and chopped coriander. Mix thoroughly until a uniform mixture forms.

Take a portion of the mixture (about 100 g) and roll into a ball, then flatten into a patty roughly the size of your bun. Repeat for all four patties.

Caramelize Onions
Heat a clean cast‑iron skillet over high flame, add 1 tsp oil, then add the sliced onions and a pinch of salt. Stir once, then let cook undisturbed for 3‑4 minutes until dark brown and slightly charred. Sprinkle 1 tbsp water, stir, and cook another minute until the onions are glossy and caramelized.

In a blender, combine 150 g paneer, 100 g thick curd, salt, a pinch of black pepper, 3 garlic cloves, 1 tsp mustard sauce, 1 tsp red chili sauce, and 1 tsp ketchup. Blend until smooth and creamy.

Prep Fresh Veggies
Wash lettuce leaves in ice‑cold water, spin dry, and shred. Slice cold tomatoes thinly. Set both aside in separate bowls.
