Instructions
Slice and Sweat the Zucchini
Using a mandoline or sharp knife, slice the zucchini lengthwise into 1/8‑inch thick ribbons. Lay the slices on a clean kitchen towel, sprinkle both sides with ½ teaspoon of salt, and let them sit for 10 minutes to draw out excess moisture. Pat the slices dry with paper towels.

Heat 2 tbsp olive oil in a large skillet over medium heat. Add the diced onion and sauté 3 minutes until translucent. Stir in the minced garlic and cook 30 seconds.
