Ingredients
- 200 g Basmati rice (rinse with cold water)
- 400 ml Water (for cooking the rice)
- 1 pinch Salt (for the rice water)
- 2 tbsp Olive oil (for the rice after cooking and for cooking the curry)
- 1 small Onion (finely chopped)
- 2 cloves Garlic cloves (crushed)
- 1 medium Carrot (grated)
- 250 g Ground beef (choose 5 % fat)
- 1 tsp Ground ginger (or fresh grated)
- 1 tsp Curry powder
- ½ tsp Turmeric powder
- 1 tsp Sweet paprika
- ½ tsp Hot chili powder (adjust to taste)
- to taste Salt and pepper
- 2 tbsp Plain Greek yogurt (add off the heat to avoid curdling)
- to taste Hot sauce (optional)
- ½ small Cucumber (cut into dice for garnish)
- 1 tsp Dried or fresh mint (for garnish)
- 1 tbsp Fresh coriander or parsley (chopped, for finishing)
Instructions
Cooking the rice
Rinse the basmati rice under cold water until the water runs clear. Place the rice and 400 ml cold water in a saucepan, add a pinch of salt, bring to a boil then reduce the heat and simmer over medium heat for about 10 minutes, until the water is fully absorbed. Remove from heat, add 1 tbsp olive oil, fluff the rice with a fork and set aside.

Preparing the vegetables and aromatics
Finely slice the onion, crush the garlic cloves, grate the carrot. Set aside.

Sauté the onion and garlic
Heat 1 tbsp olive oil in the sauté pan over medium heat. Add the sliced onion and crushed garlic, sweat for 3 minutes until they become translucent.

Add the grated carrot
Stir in the grated carrot and cook for 2 minutes, stirring.

Cooking the ground beef
Add the ground beef to the sauté pan, break it up with the spatula and brown for 5 minutes until well colored.

Seasoning
Sprinkle the ginger, curry, turmeric, sweet paprika, hot chili, salt and pepper. Mix for 1 minute to release the aromas.

Incorporate the yogurt and oil
Remove the sauté pan from the heat. Add the Greek yogurt and 1 tbsp olive oil, stir quickly to obtain a creamy sauce. Add hot sauce if desired.

Return the sauté pan to medium heat and let simmer for 10 minutes, stirring occasionally so the flavors meld.

Dice the cucumber, chop the mint and coriander (or parsley). Set aside for plating.
