Chef Tips from the Video
- Use high‑quality dark chocolate (minimum 70% cocoa) for a more intense flavor.
- Lightly dust the truffles with a drizzle of cocoa powder before serving for an elegant finish.
- For a festive version, add a pinch of sea salt on the white‑chocolate‑coated truffles.
Troubleshooting
Melted chocolate separates or becomes grainy.
Stop heating immediately, let it cool slightly then stir vigorously. If needed, add a teaspoon of cream to smooth.
Truffles remain too soft after chilling.
Ensure the refrigeration time is a full 4 hours or more. Slightly increase the proportion of dark chocolate or reduce the amount of cream.
